Salt is vital for human life, as well as for all other living beings. The chlorine ion in salt is the main material for the production of hydrochloric acid, an important component of gastric juice. Sodium ions, together with ions of other elements, are involved in the transmission of nerve impulses, contraction of muscle fibers, therefore, their insufficient concentration in the body leads to general weakness, increased fatigue and other neuromuscular disorders.
In cooking, salt is used as an important spice. Salt has a characteristic taste well known to every person, without which food seems bland.
Iodized salt is recommended for cooking, pickling and preserving. It is a prophylactic agent for endemic (iodine-deficient) goiter, mental and physical retardation of children.
